Wash sweet cherries in cold water and sort. Pack in syrup made by mixing 2 cups sugar, 1 quart water, and 1/2 teaspoon ascorbic acid. Add either 1 teaspoon citric acid or 4 teaspoons lemon juice for flavor.
Pack fruits in freezer bags or rigid containers. Squeeze as much air as possible from bags before sealing. Leave 1/2 inch headspace for expansion in containers.
