Why are my cookies spreading more as they bake?

Check the fat you are using in the cookies. If you are using margarine, but not a full-fledged margarine, this could be the cause of the problem. A true margarine has 80% vegetable fat content, and should have 100 calories per tablespoon. A margarine with less than this amount of fat (and therefore, fewer calories) has had some of the fat removed and replaced with water, technically making it a spread. These spreads do not perform well in some products, such as cookies. It can be confusing because some margarines in stick form are now spreads. Previously, spreads were confined to tubs. Label reading has become very important, and some of the packaging can be quite misleading. Often the easiest and quickest way to determine the margarine's fat content is to look at the nutrient label and the calorie content.
