It depends on the type of cheese. Hard or semi-hard cheese can be frozen if it is packaged in 1/2 pound to 1 pound amounts. It may become crumbly and mealy when thawed, but will retain its flavor. Cream cheese and cottage cheese do not freeze well. Pasteurized processed cheese (American cheese slices, for example) can be frozen for 2 to 3 months.
