Can salsa be canned?

Canning salsa or other mixed tomato products, that add vegetables such as onions, green peppers, or celery requires recipes that have been carefully designed and tested to meet the proper pH or acidity level. Use up-to-date, tested recipes that meet USDA guidelines. Do not change the proportion of ingredients in these recipes. If you have a favorite homemade recipe or want to vary the ingredients, it is best to freeze the product to ensure safety.
