What is the best method for freezing plums?
|
Select firm, ripe plums soft enough to yield to slight pressure. Sort, wash, halve, and pit. For dry sugar pack, use 1/2 to 3/4 cup sugar per quart fruit. For syrup pack, cover plums with syrup made by mixing 3 cups sugar to 1 quart water. Or pack using 1 cup sugar for 7 to 8 cups fruit.
Pack fruits in freezer bags or rigid containers. Squeeze as much air as possible from bags before sealing. Leave 1/2 inch headspace for expansion in containers.
