What is the best method for freezing peaches?

Wash peaches in cold water and sort. Dip 3 or 4 peaches into boiling water until skins loosen. Chill. Peel and slice peaches into containers one-third full of syrup made by mixing 3 cups sugar, 1 quart water, and 1/2 teaspoon ascorbic acid. 

Pack fruits in freezer bags or rigid containers. Squeeze as much air as possible from bags before sealing. Leave 1/2 inch headspace for expansion in containers.
