What is the best method for freezing beets?

Remove all but 2 inches of top; wash beets. Cook until tender. Chill. Remove skins. Slice or dice large beets. Since beets are completely cooked, blanching is unnecessary. Pack tightly in freezer bags or rigid containers. Squeeze as much air as possible from bags before sealing. Leave 1/2 inch headspace for expansion in containers.
